One Pan Whole Chicken!

Directions
Ingredients:

1 whole Outwest Farms chicken (about 3–5 lbs)

4 carrots, cut into chunks

4 potatoes, cut into chunks

1 large onion, quartered

3 cloves garlic, smashed

2–3 tbsp olive oil
-
1 tsp rosemary
-
1 tsp thyme
-
Salt & pepper to taste
Instructions:

Preheat oven to 400°F.

Toss carrots, potatoes, onions, and garlic with 1 tbsp olive oil, rosemary, thyme, salt, and pepper. Spread on a large sheet pan.

Rub the chicken with the remaining olive oil, season generously with salt, pepper, and a sprinkle of rosemary and thyme. Place on top of the veggies.

Roast 1 hr 15 min to 1 hr 30 min, or until chicken reaches 165°F internally and skin is golden brown.

Let chicken rest 10 minutes before carving. Serve with the roasted veggies.
